Homemade Hummus

This is one of our staple foods- hummus is versatile and easy to make. We eat it with veggies, with homemade pita or tortilla chips and we love them all! Hummus can be made with lots of garlic (as we make it), with paprika for spice, or with lots of lemon for a fresh taste. Experiment 'til your heart's content.

You need: 
Olive oil (to drizzle on the finished product)
3 Tbs. Tahini
Chick peas, one can, or about 16 oz. (reserve some liquid if desired)
Salt, to taste
2 lemons
2 cloves of garlic (unless you want it so garlicky it hurts- then use four cloves as I have pictured)








First, put garlic cloves into a food processor and chop them very well. 


 Next, add chickpeas and tahini to the food processor.
 Cut the lemons in half and squeeze the juice into the food processor as well. Remove any seeds.
 Add a pinch or two of salt- to your liking.
 Process until very well blended. If the consistency doesn't come out creamy enough for you, add a bit of liquid from the can of chickpeas until it's fluffy and smooth. You can also add olive oil for a similar effect. I like to leave a few chickpeas whole, or at least large, because it seems more homemade to me that way. I know, I'm know- sounds nuts.
 Finish with a garnish of a few whole chickpeas and some greenery of choice. You can also drizzle olive oil over the top. Eat with  gluten-free pita or tortilla chips, or any type of veggie sticks.

This keeps for up to a week in the fridge, so make a double batch and your lunches are done!

  1. I ADORE homemade hummus..preferably with lots of garlic and olive oil. And I use cumin for spice. Not sure the extra olive oil was the healthiest way to go, but it sure tasted good. One of my cookbooks has a recipe for no queso quesedillas; spread the hummus on a flour or corn tortilla, top with some fresh scallion and salsa, put another on top, and cook in non stick skillet. Those were pretty good too.
