Blueberry Pomegranate Breakfast Parfait

We really love a good breakfast parfait over here, and this one is an all-time favorite. Kids love the sweetness of pomegranate seeds and the satisfying crunch that comes with it- (who doesn't love that?). Plus, our kids love to help assemble these, and I really do think that it contributes to them eating it so much! I can't think of a better way to get my whole grains and antioxidants in the morning.

Plus, it's fast, easy and nutritious. Do I hear anyone complaining? No- no, I didn't think so.

Here's what to do:

Get the ingredients:

1 pint blueberries
1 cup pomegranate seeds
Organic plain Greek yogurt
Honey for drizzling (optional)

Begin by putting a layer of granola into the bottom of the dish. Next, add 2 or 3 tbs of yogurt. Spread it to the sides of the bowl or dish. Next, add some blueberries. Then add another layer of granola, then yogurt then blueberries. End with a layer of yogurt (even if it's thin) and sprinkle a bit of granola on top just for looks.  Then scoop a generous portion of pomegranate seeds on top. 

Some will prefer to include pomegranate seeds mixed in with berries throughout the parfait. Still others will like to drizzle honey over the top of the whole thing to reduce the tart flavor of Greek yogurt.

All will love.

I really was excited about your house project- maybe it's the former history teacher in me, but I get so thrilled when you post that stuff! I'm still excited about the Aztec masks you did last time.
