Seasoning The Kettle
With all the unseasonal warm weather we've been having the maple sap has just about run out. In order for the sap to run, the weather must get quite cold at night. Lately, that just hasn't happened.
So, it's been a light year to say the least, but we're happy enough to try our hands at a first *small* batch of syrup just the same.
The wax coating must first be burned off, and oil applied to the iron. Then the oil must be cooked in and the pot cooled.
And then- then- we are ready to cook down the sap - excitement brewing along with the clear liquid.
