Basic Gluten-Free Pancakes

There are plenty of gluten-free pancakes mixes available on the market for purchase, but these are almost all very expensive and aren't necessarily natural or organic. So, I've created a pancake mix of our own made with grains we purchase from a bulk buyers co-op. This way, we know what we are buying is local and organic!

Simple Home Gluten-Free Pancakes:

1 cup brown rice flour (sweet rice flour can be used, but omit sugar later)
1/2 cup potato flour
1/4 cup cornstarch
1/4 cup tapioca flour
1 tbs. baking powder
A pinch of sugar
A pinch of salt

Mix in a separate bowl:
1 cup milk
3 eggs (4 if they are small)
3 tbs. veggie oil

Mix all ingredients together. Heat a frying pan with butter or oil. Add batter to hot pan, and add frozen berries or chocolate chips as you like. Adding 1 cup pumpkin is also wonderful for a seasonal treat! You can even add the batter to a re-purposed ketchup bottle to make some neat designs that the kids will love! Cook until you can see small bubbles on the top of the pancakes, then flip and cook until it's easy to move them in tact in the pan.
